The Burgundy Truffle
Tuber Uncinatum
The star of autumn, the Burgundy truffle is harvested from mid-September to the end of January using truffle hunting techniques (using a dog to search for truffles in the undergrowth).
Dense, dark, and marbled inside, it reveals a refined aroma of hazelnut and undergrowth.
The Birth of the Burgundy Truffle
Hidden underground (we’re talking about a hypogeous fungus), the Burgundy truffle is born from a symbiosis between the mycelium (the vegetative part of fungi, made up of fine filaments) and a tree root such as oak, hazel or hornbeam.
It appears at the beginning of the year and grows until summer thanks to various rainfalls. At this time, its growth stops, and the truffle slowly begins to ripen, which is manifested by a change in its colour and aroma.
Season : mid-September to the end of January

Tuber Magnatum

Tuber Melanosporum
No sale of fresh truffles would be complete without the most iconic of them all: the Tuber Melanosporum, nicknamed the black diamond. Its powerful taste, blending humus notes and earthy flavours, offers an inimitable tasting experience. Visit our store to spruce up your Christmas season meals.

The Bianchetto Truffle
Tuber Borchii
Often considered the smaller cousin of the famous Alba white truffle, the Bianchetto truffle has a unique garlicky flavour that pairs perfectly with butter. Its smaller size and more affordable price, compared to the white truffle, make it an ideal truffle for discovering new flavours and experimenting with new recipes.

The Summer Truffle
Tuber Aestivum
The Summer Truffle, also known as the St. John’s Truffle, is found in several regions of Europe. Its aromas are generally more delicate and subtle than those of other varieties. Perfectly suited to its season, it is delicious sliced to accompany summer dishes, such as a salad or fresh burrata.
