How should fresh truffles be stored ?
Once home, place your truffles in an airtight container on a layer of absorbent paper. Change the paper daily.
If you don’t plan to use all your truffles quickly, prepare truffle butter. After infusing for 48 hours in the refrigerator, you can freeze it and use it as desired.
How much is a kilo of fresh truffles ?
It’s rare to buy a whole kilo of truffles. Generally, 5 to 10 grams per person is enough to fully appreciate their flavour.
The price of truffles varies depending on the species, the market, and the production volume.
How big is a truffle?
There’s something for everyone and every taste. Truffle hunters collect everything from small truffles, weighing only a few grams, to large, beautiful truffles that can weigh several hundred grams. Size doesn’t determine maturity.
In our shop, we select the finest truffles available, weighing between 15 and 40g. For special requests, please don’t hesitate to contact us.
What are some tips for cooking with truffles ?
We like to say that truffles are an infused ingredient.
Prepare all fats for your recipes in advance : you will obtain an intense and harmonious taste by grating the truffle into a cream or butter, then letting it infuse for 2 days in the refrigerator.
And above all, remember not to cook the truffle : it cannot withstand temperatures above 40°C (104°F). You can reheat your truffle dishes, but do so gently.
