Gougères with white truffle Parmesan cream
Preparation time 20 minutes – Cooking time 25 minutes
Ingredients for 6 people :
- 4 eggs
- 150g flour
- 150g parmesan cheese
- 50g with truffle parmesan cream
- 70g butter
- Salt and pepper
Preparation :
- Preheat your oven to 200 °C (400°F)
- In a saucepan, bring 250 ml of water to a boil with the butter, cut into pieces, and 1 teaspoon of salt.
- Remove the saucepan from the heat and add the flour all at once. Stir vigorously, then return to low heat and continue stirring for about 1 minute, allowing the dough to dry out slightly.
- Leave the dough to cool for a few moments, then add the eggs one at a time, mixing well after each addition. Stir in the grated parmesan, followed by the white truffle parmesan cream.
- Using two teaspoons, place small mounds of dough, spaced apart, onto a baking sheet lined with parchment paper.
- Bake for 25 minutes, keeping an eye on the gougères as they cook.
- One baked, turn off the oven, open the door and leave the gougères to rest for about 1 minute.
Tip :
Mix the dough thoroughly after adding each egg to achieve a smooth, homogeneous consistency. This will help ensure that your gougères rise beautifully during baking.
