At the heart of Burgundian tradition
Located in the heart of Burgundy, near Dijon, Bourgogne Escargots passionately continues to showcase the traditional recipes that have contributed to the region’s culinary richness for decades.
Each snail is prepared by hand with the utmost care to pique even the most discerning palates. This Burgundy snail farmer primarily works with the Burgundy snail (Helix pomatia), a wild species harvested exclusively from its natural habitat.
This species has been protected in France since 1979, so it is collected where it is found in abundance, in Central Europe.
Artisanal expertise
Each step of the snail-making process — cooking, shelling, and buttering — is carried out by hand by the Bourgogne Escargots team, respecting traditional methods, at their Chevigny-Saint-Sauveur premises in Burgundy.
As guarantors of quality, their snail farmers meticulously ensure the balance between tasty meat and a stuffing prepared with care and passion.

Bourgogne Escargots offers a rich and varied selection of snail products. In our shop, you’ll find ultra-fresh snails year-round, available in various formats : ready-to-eat platters of 12 or bags of 48 snails.
The brand also offers a gourmet selection ideal for appetisers : crisps, mini puff pastries filled with snail meat… Perfect for adding a festive, original touch to your social occasions ! Finally, for food lovers, a range of canned snail meat in its natural state is available.
A snail farm in the heart of Burgundy
The specialist in breeding large grey snails
L’Escargot Dijonnais is a snail farm specialising in the breeding of large grey snails (Helix aspersa maxima). Located in Fénay, near Dijon, the farm raises its snails outdoors in open enclosures from May to October, respecting the environment.
The snails feed naturally on the vegetation in the enclosures, supplemented by a cereal -based diet rich in vitamins and calcium, essential for the formation of strong and healthy shells.
The snails are prepared with fresh, local, natural ingredients in a Chardonnay court-bouillon.
A diverse range of prepared products
L’Escargot Dijonnais offers a varied range of prepared products, such as snail – croquilles presented in a shell fashioned from wheat flour,– available in several flavours : Roquefort-walnut, goat cheese-chive, Soumaintrain, and so on.
Also worth discovering : Escargo’toast verrine, a preparation of finely chopped snails in parsley butter, ideal for an original and flavourful appetiser.
